RECIPE: STREUSEL-TOPPED SWEET POTATO CASSEROLE featuring Maple Glazed Pecans
6 medium-size sweet potatoes (about 3 pounds)
3/4 cup sugar
1/3 cup milk
1/4 cup butter, melted
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs, lightly beaten
2/3 cup Maple Glazed Pecans
2 Tablespoons all-purpose flour
2 Tablespoons butter, softened
Boil, peel & mix 6 medium-sized sweet potatoes
Combine mashed sweet potato, sugar and next 6 ingredients in large mixing bowl; beat at medium speed of an electric mixer until smooth.
Spoon mixture into a lightly buttered 2-quart casserole dish
Combine crushed Maple Glazed Pecans and remaining ingredients
Sprinkle over mixture
Bake at 350 degrees for 30 minutes or until thoroughly heated
Yields 8-10 servings
